Hey everyone! Sorry I’ve been MIA, but I’m back
I’ve accomplished a lot in the past couple of days and I’ve celebrated a lot of positive things happening in mine and my friends’ lives.
Positive things to celebrate:
- Two of my best friends got full-time jobs that they absolutely love.
- I started doing freelance work for a law firm in the city.
- One of those two best friends (from #1) and I decided we’re going to get a place together–in Chicago–when we both can afford it.
- My boyfriend paid the security deposit on his new apartment in the city and got a free coffee table out of it.
- I went to the doctor to check up on my precancerous cervical cells, and they’re completely gone and I’m cancer free!
I still stuck with my diet, but I also had fun! My friends and I went out, and we danced and made new friends . . . it was a jolly good time.
On Friday, we went to this “nightclub” in the suburbs that is nothing like a nightclub in the city. It’s called Drink . . . how original. But, we did cool disco sticks and free drinks! It was better than we expected and worth the cover. Yesterday, we went out, as well, to HOME Bar, which is pretty much a hop, skip, and a step from my house. I expected more out of it (more so than I did Drink), but it was lame the entire night. There was a cover (that my friend and I got out of–thank God, because it wasn’t worth $5) and the drinks were . . . mediocre. And, that’s being polite. Seriously, my dog could mix a better sex on the beach, and he doesn’t have thumbs . . .
Yesterday, I went to the mall with one of my sorority sisters. We’re helping out with sorority recruitment, as alums, so we had to get the outfits and, damn, I thought I looked pretty foxy and fine! I’m going to rock and being a server during the rounds!!!
And, of course, here are some food pictures (because a post from me wouldn’t be complete without some :P)!!!
I finally got to eat my all time favorite type of food: MEXICAN!!! We had taco salads; ground turkey (with taco seasoning), lettuce, tomato, onion, reduced-fat cheddar cheese, and the hottest salsa I could find in my house! I love spicy food, so the spicier the better!!! After all, when I used to go to Buffalo Wild Wings (God, I miss you wings!!!), I’d get the mango habanero sauce–the third spiciest on the list of many! If you love spicy food, I highly recommend it and I highly recommend getting hot salsa for anything Mexican! Don’t be wimpy and settle for mild . . . #weaksauce
Anyways, this was really delicious! For a hot second, I thought I was eating ground beef. Thank God my mom found this in the book because I don’t think I would’ve made it through this diet without my Mexican fix
I got creative, this weekend. My mom and I were watching Mermaids–the movie with Cher and a young Winona Ryder and Christina Ricci–when I was craving a sweet movie snack! I thought, “hey, we have a ton of yogurt in the fridge. Why not freeze it. Frozen yogurt!!!” I added fresh peaches and sugar-free French vanilla syrup.
Oh. My. God. I have never eaten yogurt that fast and wished for more! Definitely going to have to make it again, but maybe I’ll try it with other fruits or multiple fruits! Grapes, strawberries, plums, pears . . . or peaches. I love a good Georgia peach!!!
Anyways, just pop it in the freezer for a little bit and it gets cold like ice cream, but not hard and chunky like ice cream. It’ll stay smooth and delicious, but it will go very fast!!!
Today, my mom surprised me with a salad from Mariano’s salad bar–our local grocery store. Romaine lettuce, bell peppers, onions, mushrooms, chicken, and . . . red grapes? All drizzled with olive oil and red wine vinegar.
Wait a minute, grapes? Surprisingly, it was pretty damn delicious!!! I love red grapes, though, so I’m kind of biased. It was a sweet and salty combo that wasn’t overpowering on either side of the spectrum. Overall, 2nd best salad so far on this diet! First obviously goes to the taco salad
